1 Cup of Flour
1 Tbsp. Sugar
1/2 tsp. of Salt
1/2 Cup Salad Oil
1 Tbsp. Milk
Blend flour, salt, oil and milk in a 9" pie plate with a fork and shape into crust. Bake for 10 to 12 minutes in a hot 400 degree oven. Let cool.
Filling:
1 Cup of Fresh or frozen Raspberries
3/4 Cup of Water
2 Tbsp. Lemon Juice
Cook about 3 minutes; strain. Save juice. Thicken juice with:
2 Cups of Sugar
3 Tbsp. Cornstarch.
Add to filling to pie base and then add 3 cups fresh berries. Cover over with rest of thickened juice. Finish the top of your pie with ½ inch pastry strips. Bake till top is golden.
Enjoy your pie with, Cream and Fresh Old Fashion Lemonade.
Tip: When using berrys in baking, add a little lemon juice it helps enhance the flavour of the berrys. Giving them a nice tart taste!
